Spicy Summer Salsa

Ingredients

  • 4 Lrg Tomatoes Diced
  • 1 Lrg Yellow or White Onion Diced
  • 2 Jalapeno Peppers Chopped
  • 3 Serrano Chili Peppers Chopped
  • 1/4 Yellow Bell Pepper Diced
  • 1/4 Green Bell Pepper Diced
  • 1 Garlic Clove(Minced)
  • 1/2 cup finely chopped Cilatro
  • 1/2 cup Chopped Green Onions
  • 2 Tomatillos
  • 1 lemon (juice only)
  • 1 tsp White Vinager
  • Salt ( 2 pinches)
  • Pepper ( 2 pinches)

Combine all vegetables together in a large bowl and squeeze in lemon juice and vinager, sprinkle on salt and pepper. Mix thoroughly. Chill for 2 hours and enjoy!

Avocado Corn Salsa

Ingredients

  • 1/4 c Fresh corn kernels ( Roasted)
  • 1 Diced medium avocado
  • 1 md Tomato seeded and diced
  • 1/4 Jalapeno chile minced
  • 1/2 Minced small onion
  • 2 ts Lime juice
  • Salt to taste

Roast corn. Put in glass bowl and add avocado, tomato, jalapeno, onion, lime juice and salt.

TIP: Always Use fresh lime when available.

Quick 20 Min Tamale Pie

Place 6-8 4 oz Tamale Factory Brand Tamales in square pan.

Pour over your favorite Salsa and Top with Refried Beans and cheese

Heat in oven for 15-20 min or until hot.

Veggie Quesadillas

Ingredients

  • 1 (12 inch) flour tortilla
  • 3/4 cup shredded Cheddar/Monterey Jack cheese blend
  • 1/2 cup whole kernel corn, drained
  • 1/2 cup diced red bell pepper
  • 1/2 cup black beans, drained
  • 1 chopped green onion

Directions

Prepare a lightly oiled large skillet over medium heat. Place the tortilla in the skillet and flip it once to ensure an even coating of oil on both sides.

Allow the tortilla to heat on one side for 1 minute. Beginning at the center of the tortilla, evenly spread the cheese blend until the tortilla's entire surface is covered. Top the cheese with corn, red bell pepper, black beans and green onion. When the cheese is completely melted, carefully slide the tortilla from the pan onto a cutting board. Slice into 8 wedges and serve warm.

El Margarita Perfecto

Ingredients

  • Crushed ice
  • 3 wedges Lime
  • 2 oz Gold tequila
  • 1/2 oz White Tequila
  • 1 1/4 oz Rose's sweetened lime juice
  • 1/2 oz Triple sec
  • 1 splash Orange Curacao

Mixing Instructions

Put all ingredients except the 3 lime wedges into a shaker.

Squeeze 2 of the lime wedges into the shaker.

SHAKE WELL! Rim outside of glass only, with lime.

Salt only the outside of glass.

Add fresh crushed ice to glass. Strain mixture over ice.

Squeeze remaining lime wedge in glass.
